Fiesta Bean & Feta Salad

This yummy compliment to any meal is super boat-friendly. Most of the ingredients are non-perishable and can be kept on board for long periods of time before preparing. Store prepared salad in Ziploc ® bags to help maximize use of refrigerator space (freezer type with double zip is preferred to assure no leaking).
Ingredients:
- 28 oz can chick peas or garbanzo beans (drained and rinsed)
- 15.25 oz can black beans (drained and rinsed)
- ½ red pepper, diced
- ½ green pepper, diced
- ½ c chopped red onion
- 1 c crumbled feta
- 7 oz can salsa verde (like Herdez brand)
- 1 t cumin
- 1 t curry powder
Preparation:
Mix all ingredients. Stir well and serve – it’s that simple!
