Galley Girl Cooks ~ Nutty Mango Delight

Great boating and scrumptious eats is our theme for this summer! My hope is that we squeeze every drop of fun out of this season. Pushing those throttles full out! Are you ready?! Let's do it!

Now that we've waxed our hulls, buffed our brass and tweaked the props — we can stock the galley with every good thing to wow the gang. Take the time to look over your provisions carefully. Stocking your galley now with great staples makes whipping up a dish in an instant quick, easy and delicious!

Fight the urge to pull the old stuff out of your home cabinets to bring to the boat. Nope! No can do. Go for it and buy fresh staples, you will thank me. You will taste the difference and so will your guest.

Remember your dish will only be as good as the quality of the ingredients you use. Buy the best quality you can get. I have learned that best equates to less in the spice department. And surprisingly, best does not always mean more expensive. Doing a little online time searching your local gourmet shops and my personal favorite Penzeys Spices — http://www.penzeys.com/ — is my "must do" task to assure I'm ready to whip up a dish in a moment's notice. No fuss, no stress. A little forethought in this department will launch your season into all yum! All fun!

So go for it — sea salt, peppercorns, minced garlic, rosemary, cayenne pepper, dill, Cinnamon, wild honey, basil, cilantro, oregano, paprika, poppy seeds, thyme, celery seed — What's your favorite? Fresh is best!

Nutty Mango Delight

  • 3 mangos, peeled, seeded, diced
  • 16 oz spring salad blend greens, rinsed and dried
  • 1/3 cup extra-Virgin olive oil, plus 1 ½ tbsp, separate measure
  • 1 ½ cups cashews, whole
  • 1/8 tsp cayenne pepper
  • ½ tsp sea salt
  • 2 tbsp honey
  • 1 lime, juiced

Directions:

  1. Heat 1 1/2 Tbsp oil in skillet on MEDIUM. Add cashews, cayenne pepper and salt; stir in honey.
  2. Remove from heat; toss, set aside to cool.
  3. Whisk lime juice and remaining 1/3 cup olive oil in small bowl.
  4. Combine arugula, mango and cashew mixture in large bowl; drizzle with dressing.

Serve with Ciabatta Baguette and butter. Yum!
